Chef Marc's Chili

1 lb. ground beef

1 lb. ground Italian sausage

1 lb. kielbasa, dice

2 yellow onions, small dice

3 lb. fresh roma tomato, large dice

6 serrano chiles, minced

8 garlic cloves whole

3, 16 oz cans black beans

3 packs med. heat chili seasoning

2 tablespoons ground cumin

1 tablespoon curry powder

Kosher salt to taste



1 - Brown ground Italian sausage and ground beef, drain and add to large heavy bottom stock pot

2 - Add diced kielbasa, onion, garlic, tomatoes, serrano's, black beans and all seasonings. Mix well (add salt as needed).

3 - Turn heat to med/low and let slow cook for at least 4 hours

4 - Serve with sour cream and good quality sharp cheddar cheese
